Rising temperatures around the world are creating a need for plates that cool us down. This is especially true in Europe, where conditions are twice as bad as in the rest of the world. In the summer, however, we’re lucky, especially in Mediterranean countries, to be able to enjoy zucchini. This salad is one of the many zucchini recipes I make in the summer, and it won’t be the last one you’ll see. That’s because zucchini is one of my favorite vegetables. Or is it actually a fruit?
Boiled zucchini is a salad I’ve seen on countless tables, whether in winter or summer, but I think it really comes into its own as a refreshing interlude between bites of grilled meat or fish. And of course, on its own, paired with lemon, which goes very well with it, it’s absolutely delicious, especially if the zucchini is tender. In any case, whether it’s a vegetable or a fruit, zucchini is one of the most versatile ingredients that can be used in many recipes. Before I share the recipe, I have a linguistic fun fact for you, the kind that always fascinates me.
Κολοκύθα (kolokytha), κολοκυθάκι (kolokythaki). Zucca, zucchina. Courge, courgette. Calabaza, calabacín. Four languages share one idea: zucchini is just the pumpkin’s little sibling.

Cut the zucchini into half-moons.
Boil the zucchini until just slightly softened.
TipZucchini need different boiling times depending on the variety.
Drain well, spread on a plate, add salt and a squeeze of lemon juice, and let sit for a few minutes.
Using a spoon, dot the stracciatella around so it reaches every bite, then finish with lemon zest and olive oil.
